It took me a few trials but I'm really happy with the current recipe for these delicious pancakes. They are tasty, simple, healthy (packed with healthy carbs, protein nutrients) - aaaaand they're pro cycling team approved!
I made them for the Delta Cycling Team whom I was looking after on their training camp last month. Gjis asked me for the recipe, Rens says he's still dreaming about them and Eamon compared them to the ones his grandmother makes! Try them, I guarantee they will be quite the hit!
For 4 pancakes, you will need:
1 cup oats ( I personally use gluten free)
1 small ripe banana
1 tsp baking powder
1 scoop protein powder
1 dash of milk ( I use almond)
Put everything in the blender. Add milk to reach a thick but smooth consistency.
Warm up your pan with a little bit of coconut oil, just enough for the pancake not to stick. When it starts making bubbles, turn the pancake over and cook it for 1 more minute before tipping it onto a plate.
For the "coulis":
Put strawberries (or any other fruit) in a pan with a bit of water and honey for about 10 mins, then blend.
Dress with fresh fruits, coulis and greek yogurt and enjoy!
